Butcher with Beef

Brett knows food. Ethan knows farms. It was delicious destiny from the very beginning.

When Brett and Ethan made the move from NYC to Chicago, they were surprised to find that the city with such a deep history in beef production had a lack of access to all of the amazing farmers and ranchers that lie just outside of it. While Brett cooked his way through prominent restaurant kitchens in Chicago as a chef and Ethan made family visits to his Dad’s cattle farm in Indiana, the idea to fulfill a missing niche in the city began to take shape.

First came Arigato Tacos. Inspired from a single taco Brett had put on a menu at a previous restaurant of his (the Poke), Brett added a few more tacos to create a small menu and set up a pop-up shop in On Tour Brewing Co. in 2017 with Ethan. Arigato Tacos quickly developed a local following, and after two years the momentum led them to open a store front of their own.

With Arigato Market, Brett and Ethan hope to foster a community where people can get inspired by simple cooking. In addition to the artisan tacos that gave them their start, Arigato Market will offer a selection of high quality and affordable, 100% pasture-raised Angus beef along with a variety of local products and ingredients from like-minded purveyors.

Quality and accessibility are the driving forces behind Arigato Market’s operation. Brett and Ethan use only the freshest ingredients in their tacos, source high quality beef and work with vendors to pass along the torch of entrepreneurship by giving small businesses a place to sell their unique products.
